Dense black-cherry and plum fruit with truffle, graphite, violet and cocoa nuances; savory tobacco and saline minerality, polished fine-grained tannins, intense, focused and long finish.

Roast lamb, beef ribeye, duck (Western); mushroom risotto, aged hard cheeses; Peking duck, char siu, braised short ribs, shiitake and truffle dishes (Asian).

Production Method
Hand-harvested; fermented in small concrete vats with gentle extraction; aged ~16–18 months in French oak barrels (around 50% new); estate bottled.
