Tasting Note
Perfumed mirabelle-plum and red-berry aromas with brioche, honey and chalky minerality. Fine pinpoint mousse, vinous mid‑palate, bright acidity and saline finish — rich yet precise.

Production Method
Hand‑harvested, gentle pressing; native‑yeast fermentation in mainly used Burgundian barrels, occasional malolactic, long lees aging (36–48 months) and disgorged with very low dosage (Extra Brut).
