Tasting Note

Ripe red and stone fruits with brioche, toasted almond, clear honey and saline minerality; subtle oxidative notes, bright acidity, creamy mousse and a long, precise finish.

Western: oysters, scallops, lobster, roast chicken, veal, creamy cheeses, mushroom risotto. Asian: sushi/sashimi, tempura, dim sum, grilled eel (unagi), Thai green papaya salad, light Vietnamese seafood dishes.


Production Method

Méthode traditionnelle: hand-harvested, destemmed, gentle press; spontaneous fermentation in mainly-used Burgundy barrels, aged on lees ~36 months, Extra-Brut low dosage (≈1–2.4 g/L).
