Tasting Note
Savory, cedar-driven Cabernet with cassis, black cherry, dark chocolate, graphite and maritime nori notes. Plush Malbec adds mid-palate weight; refined, silky tannins and a long, elegant, slightly saline finish.

Food Pairing
Roast lamb, grilled ribeye/short ribs, braised beef, mushroom risotto, aged cheddar; Korean BBQ (galbi), char siu, Peking duck, miso-glazed aubergine, umami mushroom stir-fries.

Production Method
Wild-yeast fermentation. Parcels 52% static maceration >20 days, 48% open ferment 10–15 days. Aged ~18 months in French oak (~61% new). Fined with egg whites, minimally filtered.
