Tasting Note
Violets, red berries, tobacco, forest floor and savory umami. Plush mid-palate with fine, talc-like tannins, bright acidity and a long, drying, savory finish.

Food Pairing
Western: roast lamb, grilled ribeye, beef bourguignon, aged cheddar. Asian: Korean BBQ (bulgogi), char siu, Peking duck, mushroom hotpot, beef rendang.

Production Method
Hand-harvested Tom’s Block; destemmed whole berries, wild fermentation for some batches. Cabernet static-fermented up to 33 days; Malbec and Petit Verdot open-fermented and hand-plunged. Basket-pressed, 19 months in French oak (61% new).

Vasse Felix, founded by Dr Tom Cullity in 1967, is Margaret River’s founding estate. The Tom Cullity is made from original Home Vineyard Cabernet and Malbec plantings and celebrates the estate’s heritage.
