Tasting Note
Perfumed blackcurrant and blueberry with lavender, cedar, dark chocolate and forest-floor savouriness. Concentrated yet elegant, with fine powdery tannins, lively acidity and a long, savory finish.

Food Pairing
Roasted or grilled lamb, aged beef/ribeye, mushroom risotto, hard cheeses; Asian: Korean BBQ (bulgogi/galbi), Chinese red-braised beef, char siu, miso-glazed aubergine, roast duck.

Production Method
100% wild ferment with whole-berry/whole-bunch parcels; some open ferments. Basket-pressed and matured 17 months in French oak (66% new, 34% older). Minimal racking.
