Tasting Note
Bright garnet; perfumed red and dark berries (raspberry, mulberry), rose petal, crushed rock, saline sea-breeze, orange peel and savory cigar notes. Silky, finely textured tannins, vibrant acidity and a long, elegant finish.

Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, aged cheddar; Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, Sichuan beef, teriyaki/glazed beef skewers, miso eggplant.

Production Method
Hand-picked, destemmed only; natural/wild yeast fermentation (static and open-top for portions), extended skin contact, basket-pressed to fine French oak; matured ~18 months (c.54% new).
