Tasting Note

Perfumed black-plum and crème de cassis core with violet, dark chocolate, anise and wild herb notes; powdery, finely grained tannins, bright acidity and stony minerality, finishing very long and precise.

Food Pairing

Western: roasted lamb, braised short ribs, duck confit, mushroom risotto. Asian: Peking duck, char siu/hoisin pork, Korean BBQ short ribs (galbi), soy‑braised beef dishes.

Production Method

Traditional vinification from select Sonoma micro‑crus; fermented and aged 15–16 months in ~90% new French oak; hand‑sorted fruit and careful élevage to balance oak and freshness.
