Tasting Note
Perfumed black cherry, cassis, violets, graphite and wet earth. Full-bodied, dense palate of plum, dark chocolate, licorice and tobacco with polished powdery tannins, bright acidity and a long mineral finish.

Western: roast lamb, ribeye or beef stew, mushroom risotto, aged hard cheeses. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ short ribs (galbi), soy-braised beef, umami-rich mushroom dishes.
Production Method
Hand-harvested and sorted; fermented in closed wooden vats with ~3-week maceration; malolactic fermentation; aged 18–22 months in French oak (≈50% new); egg-white fined, typically unfiltered.
