Tasting Note
Black cherry, plum, cassis, violets and iris with licorice, truffle and orange-zest accents. Silky, layered palate, vibrant acidity, polished tannins and a long, mineral-tinged savory finish.

Food Pairing
Western: roast lamb, herb-crusted beef, game birds (pheasant, quail), aged cheese (Comté, Roquefort), mushroom dishes. Asian: Peking duck, char siu, Korean BBQ short ribs, braised beef noodle, miso-glazed eggplant.

Production Method
Gentle extraction in temperature-controlled vats; fermented parcel-by-parcel; aged ~18 months in oak barrels (about 65% new).
