Tasting Note
Fragrant, ethereal Pinot Noir: vivid red cherry, wild strawberry, violets and stony minerality. Silky yet dense palate with firm fine‑grained tannins, fresh acidity and a long mineral finish.

Food Pairing
Western: roast duck, lamb, beef carpaccio, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, miso‑glazed salmon, char siu (Cantonese BBQ pork), soy‑mushroom soba, Korean bulgogi.

Production Method
Old‑vine fruit harvested at very low yields. Grapes largely destemmed, native fermentations with minimal/no sulfur during vinification; aged ~18 months in used French oak barrels; minimal sulfur added at bottling.

Vineyard Info
Small estate founded by Vincent Ledy (est. 2013). Practises organic farming (Ecocert); Les Porêts vines are vieilles vignes (planted ~1935), horse‑ploughed, producing very low yields.
