Tasting Note
Ripe orchard and stone fruit, citrus zest, marzipan and anise, wet limestone minerality, toasted oak and a long, buttery, saline finish.

Food Pairing
Western: roast chicken, lobster or scallops with beurre blanc, creamy pasta, soft-ripened cheeses. Asian: miso-glazed black cod, sushi/sashimi, tempura, Cantonese roast duck or rich soy/ginger seafood dishes.

Production Method
Hand-harvested Chardonnay; barrel fermentation and élevage in oak for c.12–18 months with a proportion of new oak; light filtration/minimal intervention in cellar.
