Tasting Note
Honeysuckle and white-peach aromas with lemon-citrus, toasted almond and subtle butterscotch; stony/flinty minerality, lively acidity and a long, focused finish.

Western: roast poultry with truffles, seared scallops, lobster thermidor, salmon with cream sauce, aged Comté or Gruyère. Asian: miso-glazed black cod, steamed crab, shiitake/mushroom dishes, sushi (meaty white fish), Cantonese steamed fish.

Production Method
Hand-harvested Chardonnay; pneumatic pressing, 16–18 months élevage in oak barrels (portion new oak), sustainable viticulture; malolactic fermentation and gentle lees aging.
