Tasting Note
Citrus, apricot and white-peach with chamomile and sage; intense flinty/mineral slate and saline notes, racy acidity, concentrated yet refined texture and a long bitter-saline finish with excellent ageing potential.

Production Method
Biodynamic farming; hand-harvested Morstein fruit; native-yeast fermentation in stainless steel and large neutral oak; minimal intervention and light sulfur, aged on fine lees.
