Tasting Note
Crisp citrus and green apple with white flowers, yellow stone fruit, and flinty minerality. Creamy mid-palate, light toasted oak, saline grip and bright, energetic acidity leading to a long, focused finish.

Food Pairing
Western: grilled/roasted sea bass, lobster, creamy shellfish bisque, roast chicken with beurre blanc, goat cheese. Asian: miso-glazed black cod, steamed fish with ginger & scallion, sushi (fatty tuna/white fish), Thai coconut curry with mild spice.

Production Method
Hand-harvested; pressed and fermented in French oak barrels with malolactic fermentation; élevage 12–14 months in 30–35% new oak on fine lees; minimal intervention and light filtration.

Domaine Xavier Monnot (Meursault) — family estate with centuries of history; 42-acre domaine. Les Folatières parcel purchased by Monnot’s grandmother, vines planted 1959–1973; bottling under Xavier Monnot since mid-2000s.
