Tasting Note
Bright lemon and yellow stone-fruit with hazelnut, herbs, toasted oak and saline minerality. Fresh, taut acidity, compact mid-palate, tight texture and a slightly bitter, medium-long finish.

Food Pairing
Western: roasted chicken, seared scallops, mushroom risotto, butter‑poached lobster, soft cheeses. Asian: steamed fish with ginger & scallions, Hainanese chicken rice, light pork belly with soy glaze, dim sum.

Production Method
Hand-harvested high‑altitude fruit; light foot‑treading and overnight skin contact, ~36‑hour oxidative must exposure, fermented in puncheons and new Burgundy barrels; ~1/3 malolactic; lees ageing.
