Tasting Note
Bright red and blue fruits—wild strawberry, plum, blackberry—layered with blood-orange, floral lift, garrigue and saline minerality. Fine sandy tannins, concentrated yet elegant, finishing long and savoury.

Food Pairing
Roast lamb, grilled pork belly, charcuterie, mushroom or tomato-based pasta; Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan lamb skewers, miso aubergine.

Production Method
Hand-picked, mechanically sorted; 100% destemmed with 50% whole berries; cold soak, open-top wild-yeast ferment, plunged; no pressings; aged ~11 months in older French oak; unfined.
