Tasting Note
Perfumed cool-climate Shiraz: dark cherries, red plums, violet, black pepper and cured-meat notes. Medium-bodied with bright acidity, fine-grained tannins, subtle oak-char and a long, savory finish.

Grilled lamb, beef stew, mushroom risotto, duck with cherry sauce; Asian: Korean BBQ (bulgogi), char siu pork, Peking duck, beef teriyaki, black pepper tofu.
Production Method
Hand-harvested from the 1973 block; ~75% whole berries/25% whole bunch; open-fermented 10–14 days with hand plunging; matured ~12 months in French oak puncheons (c.25–30% new).
