Tasting Note
Red cherry, raspberry and plum with floral lift, exotic spice and crushed-stone minerality; silky texture, fine-grained tannins and a long, elegant finish showing savory underbrush and subtle oak.

Food Pairing
Western: roast duck, roast chicken, mushroom risotto, pork loin, charcuterie, aged cheeses. Asian: Peking duck, hoisin or plum-glazed pork, teriyaki salmon, mushroom ramen, soy-braised short ribs.

Production Method
100% de-stemmed Pinot Noir, indigenous yeast fermentation, gentle extraction; matured in French oak barrels (2019: very small production, ~1 of 3 barrels new).

Domaine Y. (Yvon) Clerget is a small, family estate in Volnay with vineyard roots back to 1268; Thibaud Clerget resumed winemaking in 2015 and runs the domaine today.
