Tasting Note
Ripe black cherry and plum with currant, green olive, tobacco and green cedar; pronounced minerality and chalky, fine-grained tannins; juicy acidity and a long, savory finish.

Food Pairing
Grilled ribeye, roast lamb, braised short ribs, aged cheddar, chimichurri; Asian pairings: Korean BBQ (bulgogi), char siu, beef stir‑fries, Peking duck, mushroom hot pot.

Production Method
Hand‑harvested and bunch‑selected; destemmed and fermented in concrete vats with native yeasts; matured partly in used French oak 500L barrels and partly in concrete tanks. Low yields in the cool 2016 vintage.
