Tasting Note
Inky ruby: concentrated black cherry, blackberry, truffle, leather and garrigue with espresso, hoisin and spice undertones. Powerful, vibrant acidity, firm Mourvèdre tannins and a long mineral, savory finish.

Roast lamb, braised beef, duck confit, aged cheeses; Asian pairings: Peking duck, hoisin or char siu pork, Korean BBQ (bulgogi/galbi), rich Sichuan dishes and mushroom-based hotpots.
Production Method
Hand-harvested; varieties vinified separately (concrete/enamel for oxidative varieties, wooden/oak fermenters for reductive varieties); ~12–15 day maceration, malolactic fermentation, ~12 months ageing in oak foudres. Organic/biodynamic viticulture.
