Tasting Note
Aromas of violets, liquorice, and dark berries with garrigue. Palate offers ripe plum, fig and black cherry, mineral grip, silky tannins and a nougat-tinged, persistent finish.

Food Pairing
Roast beef, lamb, duck (Western); aged hard cheeses, charcuterie; Korean bulgogi or galbi, Peking duck, Chinese braised beef, spicy Sichuan-style beef, teriyaki or yakitori grilled meats (Asian).

Production Method
Grapes are vinified parcel- and cépage-by-cépage with indigenous yeasts and long maceration; aged ~18–24 months in 228L oak barrels. Organic/biodynamic practices are used.
