Tasting Note
Crisp citrus and green apple with white flowers, peach and lemon-zest; struck-match smoke and chalky, saline minerality, medium–full texture and a long, precise mineral finish.
Food Pairing
Western: roasted turbot with hollandaise, seared scallops, lobster or langoustine ravioli in cream sauce, roast chicken in cream sauce, soft cheeses (Époisses). Asian: miso-glazed black cod, soy-ginger steamed sea bass, lemongrass lobster, scallop tempura, richer sushi (e.g., toro).
Production Method
Hand-harvested Chardonnay; whole-cluster pneumatic pressing, barrel fermentation and ~12 months élevage (majority Mercurey light-toast oak), followed by tank rest before bottling; natural cork.

Domaine Jacques Carillon is a family-run Puligny estate; Jacques produces tensile, mineral-driven wines from old vines after the Carillon brothers split their family domaine post-2009.
