Tasting Note
Dark ruby with complex aromas of rose petal, black cherry, raspberry, moka and spice. Medium-bodied, silky texture, fine integrated tannins, fresh acidity and a long layered finish with subtle oak and pepper.
Food Pairing
Western: roast lamb, duck breast, beef fillet, mushroom or truffle risotto, soft-ripened cheeses. Asian: Peking duck, char siu, miso-glazed salmon, Korean bulgogi, shiitake/soy braised dishes.
Production Method
Hand-harvested; 100% destemmed; cold pre-fermentation 3–5 days; stainless-steel fermentation 18–20 days; élevage 14 months in French oak (50% new); bottled by the domaine.
