Tasting Note
Red cherry and raspberry core with violet and floral lift, hints of spice, toasted oak and forest-floor; medium-bodied with fine-grained tannins, bright acidity and a mineral, persistent finish.

Food Pairing
Roast duck, beef bourguignon, mushroom risotto; Peking duck, char siu (Cantonese roast pork), miso-glazed dishes, grilled shiitake or soy-glazed salmon.

Production Method
Traditional Burgundian vinification: hand-harvested Pinot Noir, (partial) destemming, fermentations in vats, élevage 12–18 months in French oak barrels (portion new).
