Tasting Note
Peony and rose-petal aromas with vivid red berries, cherry and loamy soil. Full-bodied, layered and velvety, with lively acidity, powdery yet fine tannins and a long, savory finish.

Food Pairing
Western: roast beef, braised lamb, game (venison), mushroom risotto, aged cheeses. Asian: Peking/roast duck, char siu, Korean BBQ (galbi), miso-glazed dishes, shiitake and soy braises.

Production Method
Hand-harvested; high proportion whole-cluster fermentation typical for the domaine; indigenous yeasts; full malolactic; aged c.16–20 months in French oak (≈20% new).

Family-owned Domaine Chandon de Briailles (de Nicolay) since 1834. Certified biodynamic (Demeter); horses used in the vineyard and low-intervention cellar work.
