Tasting Note
Deep garnet; concentrated black and red berries with black olive, licorice, tobacco, cedar and spicy oak. Silky yet firm tannins, full-bodied and powerful, with long, elegant finish and mineral undertones.
Food Pairing
Western: roasted leg of lamb, grilled ribeye, braised beef stew, aged cheeses (Manchego, Comté). Asian: Korean BBQ, char siu, Peking duck, spicy Szechuan beef, miso-glazed dishes.
Production Method
Organic/biodynamic vineyards; indigenous-yeast fermentation 4–5 weeks with manual punch-downs; malolactic in oak; 27 months élevage in French oak (85% new).
