Tasting Note
Dense black and red fruits (blackberry, plum, black cherry) with cedar, cocoa, tobacco, eucalyptus and savory spice. Fine-grained tannins, lively acidity and a long, saline-tinged finish.

Food Pairing
Western: roast lamb, ribeye, braised short ribs, game, aged hard cheeses, dark chocolate. Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, hoisin-glazed dishes, spicy Sichuan beef.

Production Method
Fermented in small lots with indigenous yeasts, extended maceration and manual punch-downs; malolactic in oak and élevage 27 months in 225L French oak (≈85% new).
