Tasting Note
Dark purple; expressive black/red cherry, figs and plum aromas with black pepper and spice. Dense, concentrated palate showing freshness, layered spice and elegant, integrated tannins. Very long, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roasted lamb chops, venison, mushroom risotto, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Cantonese char siu, Peking duck, Sichuan pepper beef, teriyaki-glazed dishes.

Production Method
Estate organic/biodynamic viticulture; fermentation mainly in 75hL French oak vats with some barrel fermentation; malolactic in new French oak; aged 21 months in French oak (78% new).
