Perfumed red cherry and raspberry, violet and baking spice, with earthy mineral undertones, silky texture and ripe tannins leading to a long, savory finish.

Food Pairing
Roast duck with cherry sauce, beef bourguignon, mushroom risotto, aged cheeses; Asian: Peking duck, char siu, miso-glazed aubergine, braised pork belly with soy and star anise.

Production Method
Hand-harvested, low yields; 100% whole clusters; fermentation in concrete vats with manual pigeage; aged ~18 months in French oak (≈40% new).
